Ingredients
For the Cake:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 1 cup whole milk
- 1 cup whole milk
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
For the Chocolate Fudge Frosting:
- 1 ½ cups unsalted butter, softened
- 4 cups powdered sugar
- 1 cup unsweetened cocoa powder
- ½ cup whole milk
- 2 teaspoons vanilla extract
Directions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk them together until well combined.
- Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix on medium speed using an electric mixer until the batter is smooth and well incorporated.
- Gradually pour in the boiling water while mixing on low speed. The batter will be thin, but don't worry, it's normal.
- Divide the batter equally between the prepared cake pans. Smooth the tops with a spatula.
- Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Rotate the pans halfway through baking to ensure even cooking.
- Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely.
- While the cakes are cooling, prepare the Chocolate Fudge Frosting. In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, alternating with the milk, while mixing on low speed. Finally, add the vanilla extract and continue beating until the frosting is smooth and fluffy.
- Once the cakes have cooled, place one layer on a serving plate and spread a generous amount of the Chocolate Fudge Frosting on top. Place the second layer on top and frost the sides and top of the cake with the remaining frosting.
- For an extra touch, you can decorate the cake with chocolate shavings, sprinkles, or fresh berries.
